It appears as small pieces of rhizome, soft, transparent, and fibrous seeds ranging in color from yellowish to brownish. Unlike other commercial varieties, candying is achieved using only the sugar contained in the rhizome itself.
After harvesting, the still fresh rhizome is peeled to remove the skin, cut into cubes, then boiled and subsequently cooked over a low flame.
